Questions

How does it know what is urgent?
You tell it, and this is the rule worth spending time on. A plumber might define water ingress as urgent and a dripping tap as not. Anything matching an urgent rule escalates immediately; everything else is answered and left for the morning.
What if it answers something wrongly at 2am?
The same thing that protects you in the day protects you at night: it answers from your own written material, and anything outside that should escalate rather than be guessed at. Reviewing the first week of overnight conversations is the fastest way to find the gaps.
Does it handle customers in other timezones?
